This custom decaf is a blend of current-crop small-producer coffees from the Inzá region of Cauca, south Colombia. The selection of these coffees is from a couple hundred small farm samples, picking out those that meet our specified bar of quality. This blend was not selected specifically for decaffeination, but rather we broke off a chunk of the regular lot and had it decaf'd. That is one of the most attractive parts of selecting your own decafs, the ability to control the quality. This is a "water process" decaf, handled by the folks at Swiss Water in Canada. Nearly all of our decaf coffees are "custom" lots processed by Swiss Water, returning to us a product that closely shadows the original non-decaf counterpart.
