Hunkute is a village in the Sidama region that is home to a cooperative that sources coffee from about 2000 small holder famers. Their coffees are immaculately processed with a 48 hour wet fermentation and dried on raised African beds. The resulting flavor profile is delicate, nuanced and extremely complex. Black tea and lavender dominate both the wet and dry aromatics with a backdrop of clove and chocolate. The sweetness of the coffee is intense and honeyed and the acidity is sparkling. Thick paper filter brew methods (Chemex, Kalita) work best for this coffee, as they coax out the more subtly floral aromatics.
